During the long, heavy winter months, the birch tree’s deep capillary roots reach far into the ground drawing in artesian water. That water is stored in the tree’s trunk until spring. Once the snows start to melt, the tree is bursting to hand over its precious cargo. We’re given only a small 3 week window to harvest, so we tap a small hole into the trunk, drain the tree of its delicious water and then leave it alone to rest and recover in time for the following year’s harvest.
